The new chip in my pantry.

Out of everything in this whole world, chips are my weakness. Nothing fancy either – just plain flavored chips. Occasionally All Dressed if it’s wild night.

My boyfriend and I have decided to spend the holiday season in Mexico this year sipping cervezas poolside so I have been trying to steer clear of my beloved chips for the next few months. It will make our reunion that much better with some time apart.

When the late night snack cravings have been surfacing and I’m dying for a crunch, I’ve been reaching for mini cucumbers and hummus instead. As much as I love this combination, it’s just not the same crunch factor I’m looking for.

Bring on the greatest idea ever… cucumber chips! Combining my love for cucumber and the satisfying feeling of eating chips, you can’t go wrong!

There is a bit of time that is needed to go into baking cucumber but as the weather is cooling down and the dust is blown off the oven from using the BBQ all summer, you can toss them in during the afternoon and enjoy them that night.

Below is how I have been making these. If you have any suggestions on other types of veggie chips, I would love to know what they are and give them a try. Let me know what you think of these if you make them.

Here is what you need:

2 medium cucumbers or 3 small ones

1 tablespoon olive oil (you can also use avocado oil instead)

2 teaspoons apple cider vinegar (if you want to make a salt and vinegar flavor, use malt vinegar instead)

1 teaspoon sea salt

Here is what you will need to do:

♥ Preheat oven to 175F 

Slice cucumbers very thin (if you are fancy enough to have a mandoline, you may want to use that instead)

Remove excess moisture from slices using a paper towel

Move cucumber to a medium sized bowl and toss with oil, vinegar and salt

♥ Place in the oven on a parchment lined baking sheet for 3-4 hours or until crispy  (you DO NOT want to use foil for this – they will burn and stick way to easily)

These are also really good to dip with! Try them out with a sour cream dip and you won’t be disappointed. Happy crunching!
