Queso Blanco – Flavors from Mexico.

After being home from Mexico for only a few weeks, we have already started to plan our next trip! We have competently been bitten by the travel bug! We are thinking of taking our first cruise together and going to the Mediterranean next year? I would love to know if you have done this and if you have any cruise tips and tricks for us!

Prior to our trip, I never really had an opportunity to familiarize myself with Mexican cuisine. Sure, I have made tacos, quesadillas and fajitas plenty of times over the years but that was about it. Keep in mind, I was afraid to try things because I have such a low tolerance to spicy foods so I figured it was better to stay clear of it. Turns out, I was missing out on a whole world of flavors!

Queso Blanco… have you ever tried this? It is one of the most addicting dips I have had in a long long time. Before you even have a minute to realize what you’ve done, you’ve eaten the entire bowl…and licked it when nobody was looking! I tried to replicate this recipe when I got home and there are so many different ways I found to make it so I took a little bit from each and made my own. I don’t know if it is weird or not but I would totally put this on a taco also!

Serve the dip warm and with a side of warmed tortilla chips. It has the potential to disappear really quickly after you’ve served it.

Here is what you will need:

3 tablespoons of butter

2 tablespoons of flour

1 1/2 cup of whole milk

1 cup of shredded Monterey Jack cheese

1 tablespoon chopped fresh cilantro (you can leave this out if you are not a cilantro fan)

2 tablespoons chopped tomatoes

1 teaspoon of garlic salt

1/2 teaspoon of onion powder

1/4 teaspoon of chili powder

Here is what you will need to do:

In a pan over low heat, melt butter then slowly whisk in the flour until bubbly.

Add whole milk and stir until well combined. Add garlic powder, onion powder, and chili powder.

Add cheese and mix until fully smooth.

Add cilantro and tomatoes right before serving and mix well.
