Spinach Dip Bites.

Whenever we go out to a restaurant I always skim the appetizers for 1 of 2 things to order for the table: calamari and spinach dip.

As a child, unless it was a carrot or a beet- you had no business trying to feed me a vegetable! Now, as an adult I would kill for my vegetables! I am obsessed with spinach and artichoke dips, especially with a side of warm tortilla or pita chips… yummm!

These spinach dip bites are highly addictive and great for feeding a crowd at your next get together.

Here is what you will need:

2 cups of frozen spinach – chopped and thawed

1 6oz jar of artichoke heart – drained and chopped

1/2 teaspoon of minced garlic

2 tablespoons of grated Parmesan cheese

4oz soft cream cheese

3/4 cup of shredded mozzarella cheese

1/2 teaspoon of garlic salt

1 can of seamless crescent dough

Salt and pepper to taste

Here is what you will need to do:

Preheat the oven to 375F

In a bowl, combine spinach, artichoke hearts, garlic and Parmesan cheese.

Blend in the cream cheese and half the mozzarella cheese. Season with salt and pepper and set aside.

Using a rolling pin, lay out the dough on a cutting board and lightly stretch to an 8 x 12 rectangle. Cut the dough into 2 inch squares (you should be able to make 24)

Lightly grease a mini muffin tin and place a square in each slot. Gently push down to create an indent (you don’t need to mold them to the cup)

Scoop out 1 teaspoon of your spinach mixture on top of each crescent square and gently push in. (the bites will mold to your tin while baking so don’t stress). Sprinkle the remaining mozzarella cheese over the tops of each cup.

Bake at 375F for 15-17 minutes until golden brown. Let cool for 5-10 minutes before removing from the muffin tin.
