As you probably know by now, I am always on the hunt for new chicken recipes. We eat a lot of chicken in our house and the same recipes can get boring real quick.
I am such a meatball lover but my boyfriend on the other hand could live the rest of his life without eating one. I knew by making this recipe it was going to have to be good in order for him to physically eat a meatball. Thankfully, I was able to take the gamble and have it pay off!
I have made homemade pesto in the past and it was OK but it just doesn’t ever compare to the Kirkland Signature Imported Basil Pesto. If you don’t have a Costco card, it is worth getting one just for these 22oz jars of magic or just beg a friend to pick one up for you next time! We use it all the time and go through a few jars a year!
All you need in order to make this recipe is a baking sheet lined with a baking mat and a large mixing bowl. Combine all the ingredients together, form your meatball, spray them lightly with oil and bake them. After 20-25 minutes in the oven, they’ll be tender and juicy on the inside and crispy on the outside.
These pesto chicken meatballs are the perfect addition to any pasta, rice of veggie dish. Even the non-meatball people of the world will love them!
Here is what you will need:
♥ 1lb ground chicken
♥ 1 shallot – minced
♥ 1/2 cup of panko breadcrumbs
♥ 1/4 cup grated Parmesan cheese
♥ 1/4 cup fresh of store bough pesto
♥ 1 egg
♥ 1/4 teaspoon of salt
♥ 1/4 teaspoon of black pepper
Here is what you will need to do:
♥ Preheat the oven to 400F. Line a baking sheet with a silicone baking mat and set aside. I am sure this would work with parchment paper if you don’t have a mat.
♥ Ina medium bowl, combine the ground chicken, shallot, breadcrumbs, Parmesan cheese, pesto, egg, salt and pepper. Using a spatula or your hand, mix until fully combined.
♥ Roll the mixture into balls about 1 1/2 inches and place onto the prepared baking sheet and lightly spray with oil. I used vegetable oil but avocado oil would work also.
♥ Place into the oven and bake for 20-25 minutes or until they reach an internal temperate of 165F. Remove from the oven and oven and serve with your favorite pasta, rice or steamed vegetables.
